Ingredients
  

Sourdough Batter

  • 100 grams active sourdough starter
  • 2 cups all-purpose flour sifted
  • 1 tbsp sugar
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 2 eggs beaten
  • 1.75 cups whole milk
  • 0.25 cups melted butter
  • 1 tsp vanilla extract

Instructions
 

  • Feed your sourdough starter with 100 grams of flour and 100 grams of water. Let it rest in a warm place for 4-6 hours until bubbly and active.
  • In a large bowl, sift together flour, sugar, baking soda, and salt.
  • In another bowl, whisk eggs, milk, melted butter, vanilla extract, and the active sourdough starter until smooth.
  • Pour the wet mixture into the dry ingredients and stir gently until just combined. Let the batter rest for 5 minutes.
  • Preheat the waffle iron and lightly grease it with melted butter or non-stick spray.
  • Pour about 1/3 cup of batter onto the waffle iron and cook for 4-5 minutes until golden brown.
  • Serve hot with your favorite toppings such as fresh berries, maple syrup, or whipped cream.

Notes

Customize the recipe by using whole wheat or rye flour for a richer flavor. For a dairy-free version, substitute milk and butter with plant-based alternatives.
