Ingredients
  

Peanut Butter Filling

  • 1 cup creamy peanut butter Classic peanut butter like Jif or Skippy works best
  • 4 tbsp unsalted butter Softened
  • 2 cups powdered sugar Sift if lumpy for a smoother texture
  • 1 tsp vanilla extract

Chocolate Coating

  • 2 cups semi-sweet chocolate chips Milk chocolate chips can also be used
  • 1 tbsp coconut oil or shortening For a smooth, glossy chocolate coating

Instructions
 

  • In a large mixing bowl, combine peanut butter, softened butter, vanilla extract, and powdered sugar. Mix until thick and smooth.
  • Roll the peanut butter mixture into small 1-inch balls and place them on a parchment-lined baking sheet.
  • Chill the peanut butter balls in the refrigerator for at least 30 minutes until firm.
  • Melt the chocolate chips with coconut oil in a microwave-safe bowl in 30-second bursts, stirring after each interval, until smooth.
  • Dip each peanut butter ball into the melted chocolate using a fork or toothpick. Tap off excess chocolate and place back onto the baking sheet.
  • Refrigerate for another 15 minutes until the chocolate coating is firm.
  • Serve and enjoy!

Notes

For best results, use classic creamy peanut butter instead of natural peanut butter. Store in an airtight container in the fridge for up to 2 weeks, or freeze for up to 3 months.
