Ingredients
  

Cherry Filling

  • 4 cups fresh cherries (pitted)
  • 3/4 cup granulated sugar for filling
  • 1 tbsp lemon juice
  • 2 tbsp cornstarch
  • 1 tsp vanilla extract for filling

Cobbler Topping

  • 1 cup all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 cup granulated sugar for topping
  • 1/4 tsp salt
  • 1 cup milk
  • 1/2 cup unsalted butter (melted)
  • 1 tsp vanilla extract for topping

Instructions
 

  • Preheat the oven to 375°F (190°C). Grease a 9×9-inch baking dish.
  • In a bowl, combine cherries, 3/4 cup sugar, lemon juice, cornstarch, and 1 tsp vanilla extract. Stir to coat cherries evenly.
  • Pour the cherry mixture into the prepared baking dish, spreading evenly.
  • In another bowl, mix flour, baking powder, 1/2 cup sugar, and salt. Stir in milk, melted butter, and 1 tsp vanilla extract until smooth.
  • Pour the topping batter over the cherry filling, spreading it evenly.
  • Bake for 45-50 minutes until the topping is golden and the filling is bubbly around the edges.
  • Let it cool for a few minutes before serving warm with ice cream or whipped cream if desired.

Notes

Customize this cobbler by adding a few blueberries or raspberries for a mixed berry twist, or a pinch of cinnamon or nutmeg to the topping for extra warmth.
