Avocado Spread

  • 2 large avocados ripe
  • 2 tbsp lemon juice freshly squeezed
  • sea salt to taste
  • black pepper freshly ground

Toast & Toppings

  • 4 slices whole grain or sourdough bread
  • 2 tsp extra virgin olive oil for drizzling
  • 4 eggs free-range
  • 1 tbsp vinegar white or apple cider
  • red pepper flakes optional, for extra kick
  • fresh herbs chopped cilantro or parsley
  • microgreens or arugula optional, for garnish

Instructions
 

  • Mash avocados with lemon juice, salt, and pepper until creamy with small chunks.
  • Toast bread slices until golden and crispy, then drizzle with olive oil.
  • Heat water in a pan, add vinegar, and poach eggs for 3-4 minutes until whites are set.
  • Spread avocado mixture generously on toast, top with poached egg, and garnish with herbs and red pepper flakes.

Notes

For a flavor twist, try adding crumbled feta or smoked paprika to the avocado spread. You can also serve with a side of fresh salad or smoked salmon for a more filling meal.
